There are two things going on here:
The fact of evolution (evolution happens - it has been observed)
The theory of evolution (how/why does it happen)
The fact of evolution has been proven. The theory of evolution can never be proven 100% (No explanation can be), but can explain all observed data (which evolution does).
The same with gravity. We have:
The law of gravity (the force of gravity has been measured & quantified)
The theory of gravity (how/why does it happen)
