Cuy is a very delicious dish. It tastes similar like roasted chicken. For some people is better to serve it with head and legs but I always ask for them to be cut off.
By the way, the true name of this animal is CUY not Guinea Pig. Also food like cultures are diverse in the world, we are different and that makes humanity richer.

I think this guy is very good in what he does, but he has to look for guides who really know their countries and thier reality. Perú is very rich country in food and folkclore and customs everywhere you go.
Jungle is very different from the highlands or coast every one of these have their own customs.
